Honey Garlic Sriracha Chicken

Ingredients

  • 2 tbsp avocado or groundnut oil
  • 4 chicken breasts, diced into 1-inch pieces
  • 1 large egg, beaten
  • 2 tbsp cornstarch
  • 1 1/4 tsp kosher salt, divided
  • 1 head broccoli, cut into small florets
  • 2 tsp sesame oil
  • 2 cups cooked quinoa

Honey Garlic Sauce

  • 2 tbsp honey
  • 3 tbsp sriracha sauce
  • 2 garlic cloves, minced
  • 1 tbsp rice vinegar
  • 1 tsp sesame oil

Directions

  1. Cook the quinoa as per package instructions.
  2. Prepare 2 bowls: one with a beaten egg, and the other with cornstarch mixed with a pinch of salt and pepper.
  3. Dip the chicken into the beaten egg, then place all the pieces into the cornstarch and toss to lightly and evenly coat.
  4. Heat the oil in a non-stick skillet over medium heat.
  5. Add the chicken pieces in a single layer without overlapping. Cook until golden brown on all sides, about 8-10 minutes.
  6. In a medium bowl, whisk together all the sauce ingredients.
  7. Pour the sauce over the chicken and toss to coat. Set aside.
  8. Wipe the pan clean with a paper towel, and add in the sesame oil. Preheat the skillet.
  9. Stir fry the broccoli until it starts to brown. Season with a pinch of salt and pepper. Set aside.
  10. Serve the honey garlic sriracha chicken with quinoa and stir-fried broccoli.
