Honey Garlic Sriracha Chicken
Ingredients
- 2 tbsp avocado or groundnut oil
- 4 chicken breasts, diced into 1-inch pieces
- 1 large egg, beaten
- 2 tbsp cornstarch
- 1 1/4 tsp kosher salt, divided
- 1 head broccoli, cut into small florets
- 2 tsp sesame oil
- 2 cups cooked quinoa
Honey Garlic Sauce
- 2 tbsp honey
- 3 tbsp sriracha sauce
- 2 garlic cloves, minced
- 1 tbsp rice vinegar
- 1 tsp sesame oil
Directions
- Cook the quinoa as per package instructions.
- Prepare 2 bowls: one with a beaten egg, and the other with cornstarch mixed with a pinch of salt and pepper.
- Dip the chicken into the beaten egg, then place all the pieces into the cornstarch and toss to lightly and evenly coat.
- Heat the oil in a non-stick skillet over medium heat.
- Add the chicken pieces in a single layer without overlapping. Cook until golden brown on all sides, about 8-10 minutes.
- In a medium bowl, whisk together all the sauce ingredients.
- Pour the sauce over the chicken and toss to coat. Set aside.
- Wipe the pan clean with a paper towel, and add in the sesame oil. Preheat the skillet.
- Stir fry the broccoli until it starts to brown. Season with a pinch of salt and pepper. Set aside.
- Serve the honey garlic sriracha chicken with quinoa and stir-fried broccoli.
